Tahini Choc Chunk Cookies

You might want to add these to your cookie stash! Crunchy, chewy, salty and sweet, these delicious morsels of goodness are wholesome and high in fibre. If you'd prefer a vegan option, then opt for a plant based chocolate. With tahini, olive oil and dark chocolate, these cookies from @sarahsspoonful are sure to have you dipping into the cookie jar for just for one more!

Prep Time 10 minutes Cook Time 20 minutes Servings 12 cookies

Ingredients

  • 60 ml olive oil

  • 1 tbsp (30g) tahini

  • ¼ cup (90g) honey

  • ½ cup (45g) desiccated coconut

  • 1⅓ cup (165g) rolled or quick oats

  • ½ block (vegan) dark chocolate

  • ¼ cup (30g) buckwheat flour or all-purpose flour of choice

  • Pinch sea salt

Instructions

  1. Heat the oven to 160ºC.

  2. Combine all wet ingredients in a bowl, then add the dry ingredients and stir to incorporate.

  3. Scoop out roughly tablespoon-sized balls, roll to smooth them out and then press into cookie shapes on a lined baking tray.

  4. Bake for approximately 20-25 minutes, or until golden and crispy.
