Warm Winter Salad

Here’s how to make it (serves one)
Salad
1/2 cup @nakedfoods pearl barley
1 small red onion, sliced in half & cut into wedges
1 cup pumpkin, diced
1 cup fresh parsley, diced
1 tbsp goat’s cheese or feta (omit or replace with plant-based cheese for a vegan option)
@nakedfoods hemp seeds & smoked almonds, to top
1 tbsp @nakedfoods extra virgin olive oil
1/2 tbsp fresh thyme leaves
Dressing
1/2 tbsp @nakedfoods maple syrup
1/2 tbsp@nakedfoods extra virgin olive oil
1/2 tbsp balsamic vinegar
1/2 tbsp fresh thyme leaves
Place the pearl barley in a small saucepan with 1 1/2 cups water. Cover and bring to a gentle boil. Simmer for 25 minutes, or until the barley is soft. Drain and set aside.
Toss the onion and pumpkin in the olive oil and thyme leaves. Bake at 190ºC either in an airfryer for 20 minutes or in the oven for 30 minutes.
Shake all dressing ingredients in a small bowl and set aside.
Once the vegetables and barley are cooked, combine them with the parsley and the dressing. Add to a bowl and top with the goats cheese, hemp seeds and chopped smoked almonds. Enjoy!
